Grapes: Vermentino.

Wine-making: After de-stemming, the grapes are left to macerate for few days then separated from the must. The subsequent long fermentation is interrupted during the winter, and it is started again in spring following a rigorous decanting program, with a control of storage temperature and contact with air.

Alcohol: 11% Vol.

Sensory characteristics: Straw-coloured, spicy scent of Mediterranean scrub, of walnut, candied citrus fruit, dried apricot and honey. The warm taste, never heavy, pleasant in the long persistence of the flavour of dried fruit.

Match: Matches with dry and not very sweet pastry. Excellent as after meal.

Service temperature: 10 – 12° C
